Now this is such a quick and super delicious lunch recipe, I know you guys are going to love it! Some people think that fish and cheese don’t go together. I second that most of the time, but I’m going to make an exception for this recipe, because melted cheese with tuna on any type of bread is simply a great combination. The Lean Tuna Melt Quesadilla is perfect when you just need something quick, but are craving a warm and filling lunch.
Ingredients for Lean Tuna Melt Quesadilla (serves 2):
- 4 whole wheat Tortilla Wraps
- 1 can of Tuna
- 2 tblsp Yoghurt
- ½ tblsp Mustard
- 50 grams black Olives, chopped
- ½ Bell pepper, finely diced
- ½ red Onion, finely sliced
- 4 slices of easy melt cheese, like Cheddar of Gouda
- Black Pepper
How To Make:
Add tuna, yoghurt, mustard, bell pepper, black olives and onion and mix all the ingredients. Add black pepper to taste. Then spread half of the tuna mix on one tortilla wrap, put two slices of cheese on top and when in love with Tabasco as I am, sprinkle some for a spicy touch. Put another tortilla wrap on top, press down a bit and grill both sides on a hot griddle pan or sandwich grill until cheese is melted and the tortilla has a nice toasty color. A simple, hearty lunch recipe, prepped in a couple of minutes and will last you until dinner!
