No-Meat Black Stew
It’s really getting colder now! Time to get out the winter coats and gather all the winter recipes in sight to make heartwarming dishes to warm up to. I had a couple cans of black beans sitting around, so instead of making a regular chili, I was in search of flavors to concoct a healthy and delicious stew. Since black beans are a great substitute for meat, it’s a perfect dish for a quick meat-free meal and roasted bell pepper, gives this dish a nice smoky flavor. So hurry up, get the ingredients, cook this delicious No-Meat Black Bean Stew and stay in for tonight!

Ingredients Black Bean Stew:

  • 1 tin Black Beans (rinsed and drained)
  • 1 tin of canned Tomatoes
  • 2 Carrots
  • 3 cloves of Garlic
  • 1 Onion
  • 1 roasted Bell Pepper (I used the preserved one from a jar)
  • 1 red Pepper
  • 1 (organic) vegetable Stock cube
  • 2 Bay leaves
  • 1/2 Tbsp Cumin powder
  • Fresh Cilantro (leave some behind to garnish)
  • Olive oil
  • 2 Lime wedges
  • Optional: couple of slices of Avocado
  • Optional: Yoghurt

How to Make:
Heat up olive oil in a sauce pan and start by sweating the onions and garlic. When translucent, add cumin powder and fry to release the aroma. After this crumble the stock cube in and add diced red pepper, red bell pepper and carrots, then stir for a couple of minutes. Add the tin of tomatoes, cilantro and bay leaves and let everything simmer for 10 minutes. Since the beans are already cooked, throw them into the mix and let everything simmer for another 10-15 minutes before serving with sliced avocado, a spoon of yoghurt or squeeze of lime juice and the rest of the cilantro.
