There is no surprise here! Since our theme of the week is the cucumber, our Product Highlight is filled with fun facts about this versatile veggie. You might take this vegetable for granted most of the time, but if you think it’s boring, think again, because we consider the always-available-green something you can eat wherever (office snack), whenever (morning smoothie, salad for lunch etc.)!!
- Cucumbers are scientifically known as Cucumis sativus and belong to the same botanical family as melons and squashes. We refer to it as a vegetable, but it’s technically a fruit. Who knew?
- Familiar with cucubitacins? No? We weren’t either! Cucumbers are a rich source of triterpene phytonutrients called cucurbitacins. Fresh cucumber contains cucurbitacins A, B, C, D and E. They have been the subject of ongoing research to determine the nature of their anti-cancer properties.
- We haven’t come across these yet, but there are white, yellow, and even orange-colored cucumbers, and they can be slightly oval, or even round in shape.
- Cucumber has diuretic properties, cooling effect, and cleaners that are beneficial to the skin. High water content (up to 95%!!), vitamin A, B, and C, as well as minerals, such as magnesium, potassium, manganese, and silica. Caffeic acid and ascorbic acid contained in cucumber reduces puffiness under the eyes and cucumber skin can also help heal sunburned skin and get rid of acne or pimples. How awesome is that? Gotta love the cucumber!
