The season has officially arrived where waking up in the dark with moonlight shining through your window instead of the sun is supposedly normal….(it happened to me this morning and whoa, I apparently wake up way too early!)
Besides that, it has also really gotten a lot colder these past weeks, with everybody getting out their warm jackets and scarves again. Are we liking this? I have to admit though, there’s something comforting about autumn, however I will never miss that rain pouring down, just when you are about to step out.
To make the transition into the colder days a little smoother (and to treat yourself after arriving home soaking wet), we want to share our first delicious hot drink with you! It’s our beloved Pumpkin Almond Latte. We got our inspiration from vegan blogger Kathy Patalsky who calls it a Hot Pumpkin Mug and the Starbucks seasonal special. It’s a go-to whenever pumpkins start to pop up in stores. Our version is made with fresh pumpkin and we swear, getting all cozy with a new magazine/book and this warm cup of happiness will make every summer adoring person welcome and (possibly) embrace a moody autumn season.
List of Ingredients:
– 1 cup Almond milk
– ¼ tsp ground Ginger
– ¼ tsp ground Cinnamon
– 1 cup roasted Pumpkin
– Honey or Maple Syrup (to taste)
How to prepare:
Roast three slices of pumpkin (unpeeled) in a pre-heated oven (200°C or 390°F) for about 30 minutes. Let them cool off and remove skin. Add all ingredients into blender and pour mixture into a small pan to heat up for a couple of minutes. Pour in a nice big mug and add honey/maple syrup to taste. And there you have it, your very own Pumpkin Almond Latte and it’s as easy as that!
