Soup must be one of the most diverse dishes out there. You can serve it any time of the day and it can be made from practically every vegetable available. Also, soups are so easy to prepare. Today we have a simple, but full flavored sweet potato soup for you, which can be a nice lunch with some warm bread or a light dinner option when you’re pressed for time, but still want something healthy post-workout or just a quick dinner with minimal prep, enjoyed while cuddling up on the couch.
Ingredients Sweet Potato Soup (Makes 2 servings):
- 250 grams Sweet Potato, cut into chunks
- 3 medium-sized Carrots, cut into chunks
- 1 Onion, sliced
- 2 Garlic Cloves
- Small piece of Ginger, peeled and grated
- 0.5 L. Vegetable Stock
- 150 ml Coconut Milk
- Tblsp Olive Oil
- Juice of half a Lime
- Fresh Cilantro or Arugula
How to Make:
Brown onion, garlic and ginger in olive oil. Add sweet potato and carrots and sauté for a couple of minutes. Add vegetable stock and leave to simmer for about 15 minutes. Blend all the ingredients and add coconut milk and lime juice. Leave to simmer for another 15 minutes and serve with fresh cilantro or arugula and pepper to taste.
